Pedro Ximénez Triana is made with grapes which have first been dried in the sun on straw mats. This concentrates the grape juice, the sweetness, the flavours, the substance and aromas. They then go on to be pressed and vinified before being aged in the Solera system. The ageing is a long process of fractional blending in American oak. The result is a rich and luscious PX.
