Fabien Jouves is both the hero and antichrist of Cahors. Lauded for making wines according to the age of the vines and the soils they sit on (as opposed to slinging it all into a blend) ,revealing the characters therin and exposing Cahors to a whole new audience. Villifed - and fined - for making wines from grapes that although hailing from his families 300 year old domain are not permitted by the AOC. So basically he’s our hero!
Les Escures is made from vines with an average age of 25 sitting on Kimmeridgian limestone. Classically this would be picked at full ripeness and shoved into new oak to come out with a heart of dark gnarlyness. Fabien picks ahead of this and the wine is both fermented and aged (6 months) in concrete vats to preserve freshness. It’s the most incredibly inky, purple, ruby colour with brambly, dried black fruit hints throughout. You can tuck into it right now or sit on it for a few years.
