This is just so lively! Carignan is a luscious, plump, perfumed wine from southern France but here is made in the same way as Beaujolais known as “Carbonic maceration”. This method adds such energy and spirit to a wine that I tend to sing “carbonic” to the tune of “atomic” by Blondie. You can barely believe it’s red wine and it has a little spritz to it but it is wise to have one of these in the fridge and treat as an aperitif like you would a GnT or cold beer. Really good with charcuterie, almonds, olives etc.
