Fabien Jouves is a master of Cahors but is no way a slave to it. Here he runs free from the AOC fermenting chenin blanc on its skins in an 800l amphora for over a month and then maturing it in there for another year. The amphora softens all the tannin imparted from the skins but loses none of it’s grip. It’s quite a mystic of a wine. it slinks around the palate gently revealing itself and teasing the tastebuds. At all times it is elegant and that’s really important. Vital and elegant. A great wine for someone who “knows everything about wine” (or thinks they do….)
